How to Make Pasta – பாஸ்தா செய்வது எப்படி

STEP ONE: Homemade tomato sauce (Pasta sauce / Pizza sauce)

Try adding 1 tbsp nutritional yeast and you get a perfect vegan cheese sauce

Ingredients

Fresh Riped tomato1 kg
Chopped Onion1 onion
Chopped Garlic4 – 5 petals
corn flour               1 tbsp
Chili flakes½ tsp
Oregano dry¼ tsp
Oil2 tbsp (enough to sauté onion )
Equipment’s required : sauce pan, ladle, gas range, Knife & chopping board

Blanch tomatoes for 20 seconds

Peel of the skin and chop the tomatoes finely

In a pan add oil and Sauté onion, garlic, chili flakes and dry oregano for about 3 to 4 mins

Add the peeled and chopped tomatoes and cook for 20 to 30 mins or till cooked

Add Salt to Taste

(You can add more tomato puree to thicken or add more tomato juice thin down the sauce)

If you need to make it for kids you can avoid adding paprika

Choice of tomatoes decides the quality of sauce so choose wisely and nothing can match the taste of freshly made tomato sauce.

STEP TWO : Vegan Paprika Crème (vegan, gluten-free white sauce)

Try adding 1 tbsp nutritional yeast and you get a perfect vegan cheese sauce

Ingredients

Coconut milk300 ml
Chopped Onion½ onion
Chopped Garlic4 – 5 petals
corn flour1 tbsp
Chili flakes½ tsp
Oregano dry¼ tsp
Oil2 tbsp (enough to sauté onion )
Equipment’s required : sauce pan, ladle, whisk, gas range, Knife & chopping board

In a pan add oil and Sauté onion, garlic, chili flakes and dry oregano for about 3 to 4 mins

Make coconut milk add the corn flour to it

(You can choose to extract fresh from coconut or readymade one, I have used the coconut milk powder so can adjust the consistency as required)

Add coconut milk and cook for more 5 to 7 mins or till the sauce is thickened

Add Salt to Taste

If you need to make it for kids you can avoid adding paprika Your vegan gluten free white sauce is ready if you add vegan cheese to it makes a great mac n cheese.

STEP THREE : Vegan nut free coriander pesto (Same applies for the regular pesto use basil instead of coriander)

Ingredients

Coriander          200 gm
Chopped Garlic4 – 5 petals
Melon seeds2 tbsp
Chili green2 no.
Salt                   to taste
Oil1 tbsp (enough to sauté onion )
You can use Basil instead of Corriander :
Equipment’s required : sauce pan, ladle, whisk, gas range, Knife & chopping board

In a pan add very little oil and Sauté coriander and chili for a couple of mins

Add all ingredients to a mixer grinder to make a fine paste

add Salt to Taste

Your coriander pesto is ready

Its gluten free, nut free, vegan, low fat, Can be used to coat pasta or as a dressing or dipping sauce and many other ways to use as a regular pesto

STEP FOUR : Gluten free Red Quinoa Pasta with spicy tomato sauce, vegan paprika crème and nut free coriander pesto drizzle

Ingredients

tomato sauce1 cup
vegan white sauce1 cup
coriander pesto2 tbsp
vegan cheese1 tbsp
Chili flakes½ tsp
Oregano dry¼ tsp
Oil1 tsp
Equipment’s required : sauce pan, ladle, gas range, Knife & chopping board

Blanch pasta for 6 to 7mins in boiling water

Strain and sprinkle some oil and oregano

In a serving plate spread some tomato sauce

Place the boiled pasta on tomato sauce

Pour a ladle full of vegan paprika crème sauce

Drizzle some coriander pesto and grate some vegan cheese on top

Serve hot
